Italian-style Spaghetti Sauce


3 tbsp olive oil
1
medium onion - diced
5 (five) cloves garlic - finely chopped
1 can (28 oz.) crushed tomatoes
1 can (16 oz.) whole peeled tomatoes
1 tbsp of sugar or molasses
1 tbsp basil
1 or 2 tbsp fresh parsley - chopped
1/2 pound mushrooms - sliced or quartered
1/2 can of black olives - halved
crushed red peppers to taste

Add your choice of...  Italian spicy sausage (browned)
                                  
  Ground beef (browned)
                                  
  Artichoke hearts
                                  
  Clams
                                  
  Muscles
                                  
  Tuna (chunky, in oil)
                                  
  Shrimp (drop into the pasta water in the last minute,
or stir into simmering sauce about three minutes before serving)

If you grow your own green, red, yellow, peppers (or even if you do not),
add julienned peppers for color and a wonderful added flavor.

Heat oil in large fry pan over low to medium heat.
Add onions and chopped garlic and cook for one to two minutes.
Add basil, crushed tomatoes and liquid from whole (peeled) tomatoes.
Cut whole tomatoes into bite-size bits.
Add parsley, mushrooms, black olives, and crushed red pepper.
Add sugar or molasses and muddle together.


If sauce thickens too much, add the water from the black olive can or some wine.

Include your choice of meats, cover and simmer for ten minutes or all day.




Ladle over pasta in your favorite pasta bowls. Top with Parmesan and capers.
Place garlic bread on the side and your hearty meal awaits.
